Whew! What a week! My barre training officially started and I was hired as a personal trainer at the Peninsula Wellness Center here in Monterey, CA! There is nothing quite like that feeling of all your hard work paying off. Oh and the cherry on top, my official NASM Certification came in the mail!
My barre training at Carmel Barre is really bringing me back to my roots. Some of you may already know that my fitness journey began because of my teenage dance career and the body image struggles it revealed. What you may not know, is that a couple years ago I was highly addicted to the Bar Method when I lived in Redwood City. I took classes 5-7 times per week religiously for about a year. I even almost became an instructor there! However, a new very time-consuming marketing job opportunity came and I chose the job over my training. Once I moved up to San Francisco to be closer to work, rent took up all my Bar Method funds and it just wasn’t in the budget to continue classes. Well not anymore! I am following my heart and living my dream! Tuck, tuck, squeeze!
Then, there’s the personal training gig! I love group fitness and the energy of a packed class. But, I am also so excited to have the opportunity to work with clients one-on-one. Peninsula Wellness Center is part of the Healthplex Medical Center so I am going to get a lot of experience with clients going through rehabilitation. I am not sure if working with rehab clients is my long-term career goal, but I can’t think of a better opportunity or a more gratifying experience as a trainer! I don’t think there’s a better feeling than healing those struggling the most with their health through fitness. I am just itching to get the ball rolling!
But first, I must go to West Palm Beach, Florida to watch my boyfriend play a golf tournament at the PGA National course and to visit his East Coast family! Since I may be away from the bloggersphere for a few days, I will leave you with a new recipe for delicious and moist, gluten-free, low-carb, and sugar-free Flourless Pumpkin Muffins! Did I mention how each muffin only has 54 calories, 3.5g of fat, 3.5 g of carbs, and 1.5g of sugar and also has 3g of protein?!
Flourless Pumpkin Muffins
Makes 9 muffins
3/4 cup organic pureed pumpkin
1/4 cup crunchy all-natural almond butter
1-2 tsp Pumpkin Pie Spice seasoning
1 tbsp liquid Stevia drops
1/4 cup egg whites
1 tsp baking powder
Dark chocolate chips (optional)
1. Preheat the oven to 325 degrees Fahrenheit. Grease a muffin pan with coconut oil spray or use muffin baking cups.
2. Mix together all the ingredients until completely combined. If you choose to use chocolate chips, combine them into the batter now.
3. Scoop batter into muffin pan, filling about each muffin halfway from the top.
4. Bake for 20 minutes or until golden brown and a tooth pick comes out clean from the middle of the muffin.
5. Cool and enjoy!
