Fall is here and you know what that means… #pumpkineverything! Ladies, you know what I’m talking about. Any first sense of the season changing – a leaf falling, darker mornings, cooler evenings, Halloween decor lining the aisles at Target – and it’s a mad rush to Trade Joe’s to snag some of their organic pureed pumpkin! This year I’m setting my sights on actually carving a pumpkin and roasting the seeds inside. I promise myself every year but have yet to do it for almost half a decade. Don’t judge me! Life gets in the way. There’s been no carving yet. I have a “go big or go home” attitude about it and I won’t settle for an average jack-o-lantern.
No your eyes have not deceived you. I have deviously come up with a recipe for Chicken n' Waffles that is low carb, high protein, paleo, gluten-free, and super yummy! One of the best things about chicken n' waffles? It's salty meets sweet, breakfast meets dinner, crispy meets soft, the list goes on. It satisfies a plethora of cravings. However, this high-sugar, high-fat, high-calorie dish falls short in the health category. My favorite meal is breakfast... for dinner! It's delicious, filled with protein, and super easy on those late nights where you're exhausted and just want to eat popcorn out of the bag for dinner. If you're on one of my Nutrition Plans, you know that I am a full believer in a carbohydrate-rich diet. But, there's a time and place for starches. When I eat my breakfast at night, it looks a little different. It's higher in protein and healthy fats and lower in starchy carbohydrates. This makes a veggie-packed egg white omelette the best option for night-time! I use egg whites instead of whole eggs for a couple of reasons. 1) They're 100% protein. There's no fat and no
