Oh my goodness, what a week that was! Oh and look, I’m on to the next! I officially started my personal training job at the Peninsula Wellness Center and I’m absolutely in LOVE with it! Work has always felt like a trap and just a sole means of financial survival. Until now! I sleep, eat, and breathe fitness and I don’t want to stop. I have never been so motivated in my life to put in the hours, hard work, and learning. I have pushed myself far beyond my comfort zone with enthusiasm!
Between personal training and teaching Pilates inspired boot camps and Zumba classes at Peninsula Wellness Center, going through teacher training at Carmel Barre, and prepping for my ACSM (the Wellness Center does not accept NASM certifications, unfortunately), my life has taken a 180 from an unemployed blogger. Does it stress me out? Of course, a little. But it’s a different kind of stress because I WANT to do all of these things. I’m living my passion and it’s the most energizing thing I’ve ever experienced! I’m helping people feel and look their best everyday and it’s one of the most gratifying experiences.
So please, if you are in a job or industry that just does not suit you, that leaves you sleepless, full of anxiety, lethargic or making unhealthy decisions, you are not stuck! Start researching what it is that actually inspires you, make a plan, and then, the most important part, go for it! A dream is only a dream until you make it a goal and take ACTION.
If you don’t know what you want to do, that’s okay too. One of the best ways to find your passion is to think about what you loved to do most as a child, before society and the pressure of being financially sound influenced your decisions. Listen to your gut and just keep pushing forward until it clicks. Nothing is a waste of time. Hard times come for a reason and usually you can learn the most about yourself during them.
Life tends to work out when you put the hard work in, so don’t fear change, embrace it! This week I have learned that a lot of the breakfasts I’ve made while being less busy do not fit into my hectic morning schedule anymore. I’m sure the majority of you can relate. Some of you may even skip breakfast because you feel like you don’t have time. Well, for those of you who just laughed at yourself, you may not like me for saying this – eat breakfast, dammit! The easiest way to explain the science behind eating breakfast is that your body is literally asleep until you feed it. Sure you can still function, but your metabolism hasn’t started (unless you began your day with exercise before breakfast which is absolutely okay!) and your brain is going to lag as well. This post has gotten quite lengthy so I will leave the detailed explanations about meal planning to another time. I also offer meal plans and guidelines with my training packages!
5 Energizing Breakfasts in Under 5 Minutes
I have put together five complete, healthy, and clean breakfast ideas suitable for vegans, vegetarians, and meat eaters that will only take five minutes to make!
1. Egg White Scramble
Ingredients: 1 cup egg whites, 1 cup spinach, 1/4 cup diced tomato, and diced onion (as much as you like). I also like to add mushrooms sometimes!
Preparation: Spray a non-stick pan with coconut oil cooking spray. Sauté onions and mushrooms for 1-2 minutes. Pour egg whites onto pan. Let them cook halfway through then add the tomatoes and spinach. Serve with a side of fruit (I love berries and bananas in the mornings) and/or a slice of Ezekiel or sprouted grain toast.
2. Emily’s Infamous Protein Waffle
Ingredients: 1/2 cup egg whites, 1/2 scoop plant-based protein powder (I love VegaOne), 1 tbsp coconut flour, 1/2 mashed banana, cinnamon to taste
Preparation: Combine all ingredients in a bowl with a whisker or electric blender. Spray a pre-heated waffle-maker with coconut oil cooking spray. Pour batter into waffle-maker. Now go hop in the shower or blow dry your hair while it cooks to a golden brown. Top with fruit, a light drizzle of honey, 100% pure maple syrup, or 1 tbsp of nut butter.
3. Protein-Packed Oatmeal
Ingredients: 1/2 cup oats, 1 cup water or unsweetened almond milk (or 1/2 cup of each), cinnamon and Stevia to taste or a drizzle of honey or 100% pure maple syrup, 1/3 cup egg whites, 1/2 banana or fruit of your choice, and 1 tbsp peanut or almond butter
Preparation: Add oats and water or unsweetened almond milk to a bowl. Cook in microwave for 2 minutes. Add in egg whites and stir. Microwave for another minute or until fully cooked. Let cool for a minute. Add in sweetener and cinnamon and stir again. You can also add more unsweetened almond milk if you like a milkier consistency. Top with banana and nut butter. Yum!
4. Crunchy Yogurt and Fruit Parfait
Ingredients: 3/4 cup plain non-fat Greek yogurt, 1/4 cup berries, 1/2 chopped banana, 1-2 tbsp crushed walnuts or pecans, Stevia to taste or a drizzle of honey or 100% pure maple syrup if you like. This is also delicious with some Organic, unsweetened, pure pumpkin puree mixed in. The options are limitless as long as you’re using healthy ingredients! A few of my other favorite toppings are cacao nibs, toasted, unsweetened coconut, and chia seeds.
Preparation: Put everything in a bowl and mix! Then, eat 🙂
