If you know me outside of Life in Spandex or you’ve been reading for a while now, you know I LOVE making my favorite treats into healthy desserts! You can thank my sweet tooth for recipes like these healthy Oatmeal Chocolate Chip Cookies, 15-Calorie Fudgsicles, Flourless Pumpkin Muffins, and 150-Calorie Protein Pancakes. Though my cooking skills sometimes lack (I’ll admit it! I tend to make the same things over and over again. It just works for me and the busy schedule I have!), I’ve never been shy to experimental baking. And, I have to say, I’m pretty damn good at it. Well, the majority of the time :).
