Chocolate Banana Nut Protein Pancakes

I admit, I am a breakfast food junkie. Oats and eggs have special places in my heart, but I am absolutely addicted to protein pancakes. I will gladly eat them for breakfast, lunch, dinner, or a late night sweet treat. They satisfy all my basic needs – 1) easy to prepare 2) filling 3)healthy 4) taste like dessert! What more could a girl ask for?

I’ve outdone myself with this new protein pancake recipe. And I didn’t think that could be done after concocting these Pumpkin Pie Protein Pancakes. I was inspired by Rootz Nutrition Chocolate Banana Nut Protein-Superfood powder. They sent me a couple samples and as soon as I opened the bag, smelled the powder, and tasted the stuff bare, my life had changed. I mean, really, what protein powder tastes good straight off your dipped finger? The stuff is a game changer.

Wait, I haven’t even gotten to the best part! Their Protein-Superfood is paleo, gluten-free, made with no artificial ingredients, and is stocked full of, you guessed it, superfoods. I don’t know about you, but when I think of superfood blends, I imagine a chalky, green powder that you have to plug your nose to get down. Not Rootz Nutrition! Their blend has anti-inflammatory Omega-3 fatty acids, muscle-building protein, bone-strengthening calcium and magnesium, satiating fiber, immune-boosting zinc, along with other essential nutrients like iron, potassium, and Vitamins B, C, & E that I need as an active woman. AND it tastes straight up like a chocolate banana nut muffin. Sounds too good to be true but trust me on this. Protein Blend
Egg White Protein, Sacha Inchi Protein, Hemp Protein

Electrolyte Blend
Coconut, Banana

Superfood Blend
Chia Seeds, Flax Seeds, Maca Root, Bee Pollen, Acai, Goji Berries, Blueberries, Royal Jelly

Green Detox Blend
Spirulina, Chlorella, Kale, Spinach, Broccoli

Other Ingredients
Natural Chocolate Extract, Natural Vanilla Extract, Stevia Leaf, Cinnamon, Natural Sea Salt

Chocolate Banana Nut Protein Pancakes Recipe 

Ingredients

1 serving Rootz Nutrition Chocolate Banana Nut Protein-Superfood

2 tbsp coconut flour

1/2 cup egg whites

1 tbsp unsweetened cocoa powder

2 tbsp granulated Stevia

1 tbsp walnuts

1/2 mashed banana

1 tbsp dark chocolate chips (optional)

1 tbsp 100% pure maple syrup (optional)

*Note: this recipe is not Paleo or free of added sugars if you choose to use the chocolate chips. It is not free of added sugars if you choose to use 100% pure maple syrup.

Preparation 

  1. Combine all ingredients, except the walnuts and chocolate chips, and whisk until fully combined.
  2. Fold in walnuts and chocolate chips (if you choose).
  3. Preheat a large pan on medium/high heat and spray with coconut oil cooking spray.
  4. Pour batter into pan in medium/small circles.
  5. Cook on the first side until the bottom is golden brown.
  6. Flip and continue cooking until fully cooked through.
  7. Stack on a plate and top with 1 tbsp 100% pure maple syrup (optional).

Calories and Macronutrients: 350 calories, 10g fat, 30g protein, 35g carbohydrates (macronutrients don’t include chocolate chips or maple syrup)
