When I'm angry, I bake. When I'm happy, I bake. When I'm sad, I bake. When I'm anxious, I bake. So you'd think I'd have this long list of baking masterpieces I've created over the years. Well, there's a list but it looks a little like this: Coconut Flour Chocolate Chip Cookies Banana Bread Chocolate Chip Cookies Almond Flour Chocolate Chip Cookies Oatmeal Chocolate Chip Cookies Oatmeal Chocolate Chip Cookies with Walnuts You get the picture. I love a good, mindless activity when my emotions run deep. So, creating the same recipe over-and-over again (I don't even use measuring utensils anymore) is therapeutic for me. There's also nothing like a good chocolate chip cookie. Am I right? And my friend's,
The experimenting all started in my first college apartment. No, not that kind of experimenting! I'm talking about baking!! College Emily would sometimes (ok, kind of often) turn down plans in order to stay in, watch a movie, and come up with a new baking concoction. Aside from my occasional anti-social behavior, I've always had a major sweet tooth and have loved finding healthy ways to satisfy it! You can thank my love-hate relationship with sugar for recipes like my Chocolate Banana Nut Protein Pancakes, Tropical Mango Smoothie Bowl, Yogurt and Chocolate Dipped Strawberries, and Double Chocolate Single Serve Mug Cake. The easiest way to start experimenting with baking recipes is to swap out the not-so-healthy ingredients for healthier ones!
I am feeling refreshed and fulfilled after an amazing vacation in Maui. We hiked waterfalls, layed by the pool, drank champagne, enjoyed local fish and coconut ice cream, went snorkeling, and munched on island fruit. It's always an adjustment to transition from vacay mode back to adulting. Since arriving back to Monterey, I've started my new position at the gym (more to come on this later if you guys are interested), received my official Precision Nutrition Certification in the mail (yup, I offer Nutrition Coaching now!), and redecorated my bedroom, all while struggling from some major jet lag. It's always an adjustment to transition from vacay mode back to adulting. Rather than mourn the end of my trip, I decided to
Hi guys! I'm in the process of moving and the majority of my time has been spend building beds, moving boxes, and organizing our stuff. I didn't realize how much of it we have! How my boyfriend and I managed to fit all of our stuff in a one bedroom apartment with one main closet and one coat closet is beyond me. Now, I'm in North Carolina! So, this week I thought I'd mix it up and feature another awesome fitness and healthy living blogger who knows how to make a mean energy bar! I love her plant-based take on cooking and her recipes are seriously yummy! Another #girlboss and #gymrat who has had an amazing fitness transformation... Bri! Hi
Who doesn't love donuts?! Nothing baked can really replace a gooey, soft Old Fashioned glaze. However, chowing down on fried dough on a regular basis doesn't usually mesh well with our health and fitness goals. I created a delicious alternative that's almost like the real thing for those moments where you don't want to resist but also want to stay on track! Oh snap! Don't hug me quite yet. You haven't even heard the best part! These donuts aren't just a better alternative to a Dunkin' Donut run. They're made with ingredients to aid your fitness progress! Stacked with protein, healthy fats, low in carbs, and sugar-free, you could literally eat these donuts for breakfast every day. Okay, you can hug me
