Teaching my 6am barre classes in the dark again is a harsh reality that summer is almost over. Womp womp womp. It's okay because, like most, I love the fall. I'm looking forward to lots of pumpkin recipes, colorful leaves, and cozy nights in. However, I'm not quite ready to turn in my watermelon for apples, bikinis for sweaters, or warm evening walks for comfy blankets quite yet! I created a recipe for a delicious, summer-packed salad to savor the remaining weeks of sunshine, iced coffee, and long days. If you watched my recent Q&A Vlog, You know that I'm a big fan of salads with lots of flavors and textures. When deciding what ingredients to use in this summer salad I knew I wanted
