One Pan Chicken and Veggie Bake

One-Pan Chicken & Veggie Bake

Why is it that life’s most enjoyable moments can be followed by such tedious tasks? Going to bed early followed by waking up to a shrieking alarm. Showering followed by blow drying your hair. Putting on PJs followed by brushing your teeth. Having friends over for a party followed by clean up. And, alas, cooking followed by… dishes, ugh! I love cooking! I love creating new flavors, finding healthy alternatives to my favorite treats, and seeing the smiles on my guests faces when they try my food. But I hate, absolutely hate doing the dishes. For one, it’s gross. The grease, grime, and old food particles. Ick! And, after a big meal, it can seem endless. Say sayonara to perpetual Read More

Jack-o-Lantern Stuffed Peppers

Stuffed Jack-o-Lantern Peppers

So if you read the Pumpkin Pie Protein Pancakes recipe post, you know I’m set on ACTUALLY carving a pumpkin this year. Well, it has yet to happen. That doesn’t mean I’m not in the Halloween spirit. Au contraire. The time not spent making Jack-o-Lanterns was filled with getting lost in a corn maze, being chased by chain saws in a Haunted House (that is a great way to get in your cardio for the day, by the way), and carving some bell peppers! Yes, you heard that correctly. In the spirit of Halloween, I turned your average stuffed peppers recipe into a Spooktacular one! 😉 Aside from being really cute and festive, there’s a couple things I love about Read More

Low Carb, Paleo, Gluten Free Chicken n' Waffles featured

Paleo, Gluten-Free, Low Carb Chicken n’ Waffles!

No your eyes have not deceived you. I have deviously come up with a recipe for Chicken n’ Waffles that is low carb, high protein, paleo, gluten-free, and super yummy! One of the best things about chicken n’ waffles? It’s salty meets sweet, breakfast meets dinner, crispy meets soft, the list goes on. It satisfies a plethora of cravings. However, this high-sugar, high-fat, high-calorie dish falls short in the health category. I was inspired to make a healthier version after my week-long trip in Pinehearst and Charlotte, North Carolina where the options for fried chicken and sweets are endless. Needless to say, I took full advantage of being on vacay and ate to my hearts desire. Sometimes that meant ordering a Read More

Clean Eating Rosemary Balsamic Chicken Breasts

First things, first, I want to give a shout out to the winner of the Brooks Running give-a-way. Congrats to Elizabeth! I’ve sent you an email from lifeinspandex10@gmail.com to gather your size, color preference, and mailing address. I can’t wait to see how cute these pieces look on you! Can you believe it? I’m posting a recipe that isn’t sweet?! Yes, I do eat food other than healthy desserts and breakfast ;). I’ve been obsessed with the premade Rosemary Balsamic Chicken Breasts from Trader Joe’s. I started buying them as a quick dinner for Robby when I didn’t feel like cooking. But of course, after one bite I totally fell in love with them myself! Trader Joe’s, you are my life! Who’s Read More

My Vegan Thanksgiving

My Vegan Thanksgiving

I can’t believe Thanksgiving has already come and gone. I guess when you’re cooking all day, time flies! This year I spent Thanksgiving at my Dad’s with my (not so) little brother and his girlfriend. It was small, quaint, perfect, and…. completely vegan! Yup, we had a plant-based, meat and dairy-free Thanksgiving dinner. And, it was delicious! My brother decided to go vegan a couple of months ago after watching Cowspiracy and realizing the harmful affects our agricultural system has on the environment. He’s so passionate about it he managed to convert his girlfriend and even my meat-loving dad into vegetarians! Some of you may know that I followed a strict Pescatarian (fish-only) diet for about 4 years after reading Michael Read More
