I’ve been using Further Food Collagen Peptides for the past few months and I’m loving the results. My hair has never been longer or healthier, my nails are unbreakable, my skin feels firm and smooth, and it’s been helping with my joints (very important as I battle chondromalacia patella). As if these muffins weren’t already packed with superfoods, I also used cacao powderinstead of cocoa powder. Cacao is packed with anti-aging antioxidants like polyphenol, energy boosting magnesium, flavonols for heart health, the “bliss molecule” anandamide, and it helps lower blood pressure and  balance your hormones (goodbye monthly mood swings. Well maybe not entirely, but it’ll help!).

Anti-Aging Dark Chocolate Protein Muffins

Ingredients

Makes 6 muffins

3 scoops vegan vanilla protein powder

1/4 cup almond flour

1 tsp baking powder

1/3 cup cacao powder

5 scoops Further Food Collagen Peptides

1/3 cup granulated Stevia

1/2 mashed banana

3/4 cup egg whites (or 3 flaxmeal eggs for a vegan version)

3 tbsp unsweetened almond or coconut milk

2 tbsp melted coconut oil

Preparation

  1. Preheat oven to 375 degrees and spray a muffin tin with coconut oil cooking spray.
  2. Combine all dry ingredients (protein powder, almond flour, baking powder, cacao powder, collagen peptides, and Stevia) in a large bowl.
  3. Stir the wet ingredients (mashed banana, egg whites (or flax eggs), milk, and coconut oil) in a small bowl until full combined.
  4. Gradually mix the wet ingredients into the dry until smooth and fully combined.
  5. Scoop evenly into muffin tin.
  6. Bake for 20 to 25 minutes or until a toothpick comes out clean from the center.
  7. Eat and enjoy!
